Plant substances affect elevated serum cholesterol levels by a variety of mechanisms: they reduce intestinal cholesterol and bile acid
absorption, inhibit hepatic cholesterol synthesis, protect LDL-cholesterol from oxidation, and increase HDL-cholesterol content at the
expense of LDL-cholesterol.
